Well you could join the thieves guild or the Dark Brotherhood for good armor, plus if you get really deep into the Thieves Guild questline you'll get Nightingale armor which is also pretty good. I'm not sure I'd go into theivery, but the prospect of Nightingale armor seems neat.

Nightingale armour (like the Dark Brotherhood armour) looks cheesy to me. I think it appeals to people who find the sleek and ninja-y aesthetic cool, but I prefer the more gritty, vaguely realistic, and non-character-obscuring armours, especially the Guildmaster's Armour, but also iron, steel, plate steel etc. Guildmasters is better to a sneak.
